To obtain meat sauces as we had thought, we have chosen the leanest meats of animals left to pasture and after having marinated the meat for the time needed, we browned it lightly in extra virgin olive oil, and then sprinkled it with tho most aromatic red wine. Only by following this procedure are we able to obtain these meat sauces and only in this way will your cornmeal and pappardelle offer you the sansation you thought as being lost.
